Fall Is In The Air




It's that time of year again. You can smell it in the air, the smell of the autumn leaves. Comfortable temperatures, football on Saturdays and leaves falling. I can't wait for the trees to start turning shades of yellow, orange and red. Fall is the most beautiful time of year.

County fairs with cotton candy and funnel cakes, YUM! I am so excited! Do you have any favorites for fall? Leave a comment, recipes, favorite locations during the fall months anything. I would love to hear stories from everyone! : )

  1. I love this pumpkin cupcake recipe that I got from afewshortcuts.com. I used Pilsbury ready made frosting instead of the glaze. I like to call them muffins so I can eat them for breakfast and not feel guilty! :)

    Serves: 24 cupcakes
    These Pumpkin Cupcakes are the perfect usher to Fall
    Ingredients

    * 1 cup granulated sugar
    * 1 cup brown sugar
    * 1 cup vegetable or canola oil
    * 3 eggs
    * 3 cups all-purpose flour
    * 2 teaspoons baking soda
    * 2 1/2 Tsp Pumpkin Pie Spice
    * 1/2 tsp salt
    * 1 package instant vanilla pudding mix
    * 1 can (15 ounces) pumpkin puree
    * Glaze
    * 2 cups powdered sugar
    * 1/2 tsp cinnamon
    * 2-4 TBSP Milk

    Directions

    1. Preheat Oven to 350 degrees F
    2. In a large bowl, combine sugar and oil until blended. Add eggs, one at a time, beating well after each addition.
    3. In a separate bowl, combine flour, baking soda, Pumpkin pie spice, salt and pudding mix.
    4. Add flour mix to egg mixture alternately with pumpkin, beating well after each addition.
    5. Fill lined cupcake pan 3/4 full and Bake at 350 degrees for 25-30 minutes or until toothpick inserted near the center comes out clean.
    6. Remove from pan and cool completely.

    Glaze

    1. Whisk together powdered sugar, cinnamon and add 1 tbsp of milk at a time until desired consistency.
    2. Dip warm cupcakes into glaze to coat.
