Holiday Breakfast Casserole

Recently I was in search of something "new" to make for dinner. So I was looking around and decided maybe Breakfast for dinner! Yes! Great Idea! Turns out it was a fantastic idea! I made a Holiday Breakfast Casserole and it was Delicious! This one was great for dinner but would also be good if you, like me, have to bring a dish to family gatherings etc. Or even office parties. This one is a winner!



Holiday Breakfast Casserole

Ingredients:

1 package (12 oz) bulk pork sausage
1/3 cup chopped onion
1/3 cup chopped green bell pepper
1/3 cup chopped red bell pepper
10 eggs
1 cup shredded Cheddar cheese (4 oz)
1 can (16.3 oz) Pillsbury® Grands!® Flaky Layers refrigerated original
biscuits

1. Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In 10-inch skillet, brown sausage, onion and bell peppers; drain well. 

2. In large bowl, beat eggs. Stir in cheese and sausage mixture. Separate dough into 8 biscuits. Press
biscuits into bottom of baking dish. Pour sausage mixture over biscuit crust.
3. Bake 25 to 30 minutes or until egg mixture is set and crust is deep golden brown. Cool 5 minutes
before serving.


This can be done a few different ways but this is the basic recipe. You can use 12 eggs instead of 10 and Use more cheese that what is called for, which is what I did. It was so yummy! You could also make some white biscuit gravy to go along with it which makes it even more yummy! 

It's Christmas Time!!!

It's that time of year again, when the leaves have fallen from the trees and the lights start to go up on the houses. Neighbors creating their own little light wonderlands. Beautiful time of year which I enjoy just as much as the children do!

I am excited to get back to my blog since things have slowed down a bit and I can give it more attention. (I think there are a few of us who say this all the time) I am getting ready to start posting recipes for the holidays and hope to find many more that I get to try out!

Only a few weeks left till Christmas, I am thinking about maybe a giveaway also. If I can get more followers on my blog as well as my Facebook Page then I will start doing a giveaway each month. That's my goal for now. And I am sticking to it!! :)

Back to Baking!!

So this weekend I sort of got into this mood once again to start my baking. Actually, it started before the weekend, I just wasn't sure what kind of mood I was in until I was standing in my kitchen and it hit me all at once, I wanted to cook something!! So, with the help of my friend, the internet, that's what I did. Now it's time to share my inspiration.

First on the list was a family favorite by request as usual. Chicken Dorito Casserole! I'm sorry I don't have a picture for this one. But here is one I found online that is the same and shows you what it will look like.



That is how it will LOOK however that one was made a little differently than my own recipe which you can get to by clicking on the picture or here 'Chicken Dorito Casserole' . 


Next on the list was one of TWO sweets I wanted to make. Neither of which I have tried before but was excited to make and try! Oreo Cream Cake  with credit for the photo and recipe going to Baking Junkie! I found her website and went nuts! There are so many other things I will be trying soon! I have also linked back to her awesome site full of treats in the photo also. 

This was SOOOO good! I did however use a different frosting recipe than she used in her recipe, which can be found here> Chocolate Buttercream Frosting. It was sooo good, and not too rich like most chocolate cakes.


Last but not least was the 7-UP Cake! Credit for photo and recipe going to The Country Cook. This was AWESOME and I am so glad I made it! So warm and yummy!!


This was mouth watering GOOD! The Country Cook is also another site I will be returning to and making more yummy treats!

Brandied Apple Upside Down Cake


Ok so I found this cake in an issue of Family Circle for Oct. 2011 and went for a search online and found the one below on Celebration Generation. Go check out the picture she has with it! I can not WAIT to give this a try! I can already smell the warm apples wafting through the air.


What You Need:

1/3 cup Butter, melted

1 1/2 tsp Flour
1/2 cup Brown sugar

3 Tbsp Apple Brandy
1/2 tsp Cinnamon

2-3 Large apples, sliced
2 cup Cake flour
1 1/2 cups Sugar
4 tsp Baking powder
1 tsp cinnamon
1 tsp Salt
1 Instant vanilla pudding mix (3 ½ oz)
4 Large eggs
1/2 cup Water
1/2 cup Apple Brandy
3/4 cup Butter, melted


How To Do It:

Preheat oven to 325°F (160°F). Liberally grease a 10″ round pan with vegetable shortening. Cut out a 10″ round of parchment paper, using bottom of pan as a template. Place inside pan, smoothing it out to cling securely to the shortening.

Combine melted butter, flour, brown sugar, apple brandy, and cinnamon in a small saucepan. Heat on low, stirring until well combined. Pour into prepared cake pan, spreading evenly. Arrange fruit slices on top of this mixture,set aside.

Combine flour, sugar, baking powder, cinnamon, salt, and pudding mix in a large mixing bowl. Add in eggs and water, beating until smooth. Carefully add apple brandy and melted butter to the mix, mixing on medium speed until smooth. Gently pour into prepared pan. Bake until golden and knife inserted into center of batter comes out clean and cake springs back – about 50-60 minutes.

With the hot cake still in the pan, carefully level the top by cutting off the “dome” over the edge of the pan Allow cake to cool for about 20 minutes before turning cake out directly onto serving plate.

Chocolate Covered Strawberries

These make a great treat for summertime. With Independence Day around the corner this is a quick and easy desert to make. It will make the perfect addition to the table at the 4th of July parties. Chocolate Bark you can find at your local grocery store and fresh strawberries just melt and dip. Simple and delicious!
