Book Of The Month June 2022 "One Of Us Is Dead"

 This month's book is One Of Us Is Dead by Jeneva Rose



I first found Jeneva Rose on TikTok when she was promoting her book The Perfect Marriage. I was so intrigued that I ordered it and read it in 1 day. It was just that good. She also authored 2 other Titles under her pen name J.R. Adler. They are detective fiction novels. After finishing The Perfect Marriage I also purchased the 2 books in that series and read through those immediately. 

When she announced she had a new novel coming out I could not get my hands on it fast enough. And yet again she kept me hooked right through to the end. Never saw that ending coming either. 

My Review: This book pulls you in and keeps you hanging on for more. My jaw dropped at some revelations that come along and I could not get through it fast enough!!

Chicken Dorito Casserole

I posted this once before but I am re-posting because the link I gave previously to my recipe for this has been removed from the site it was on.

I am going to be posting quite often here with new recipes and random ramblings. 

Let's get to the recipe shall we? 





What you will need:

4-6 cups cooked chicken, chopped (I used a rotisserie chicken)
2 cans cream of mushroom soup
2 can cream of chicken soup
2 cans Rotel tomatoes- do not drain
1 can of corn, drained- optional
2 cups Mexican cheese, shredded
2 cups Sharp Shredded Cheese
1 bag of Nacho Cheese Doritos
Half of Green bell pepper chopped
1 Bundle green onions- chopped
2 tbps Butter


DIRECTIONS:
Preheat oven to 350 degrees.
Saute Onion and Bell Pepper with the butter in skillet

Lightly spray a 9x13 pan with cooking spray (I use a deeper throw away pan from the grocery store but either is fine).  Crush the entire bag of Doritos and cover the bottom of the dish with half of the bag of crushed chips.  Reserve one cup ( maybe a bit more if you like it cheesy) of cheese (for the top).   Mix together remaining ingredients in a large bowl.  Pour half chicken mixture over the Doritos then top with cheese to cover. Repeat with second half of doritos, followed by second half of chicken mixture and top with remaining cheese. Bake for 45 min COVERED, remove from oven and uncover then bake an additional 10 minutes.

Attention Attention!!

As you may have already noticed my blog is undergoing a revamping. I have new things coming (new addition to the family and a new addition business wise) and wanted to get it going with a new and fresh perspective! I am excited and hope that you will be too! White Chili Recipe

White Chili

Ingredients:

1 rotisserie chicken- deboned

2 cans  Great Northern Beans

32 oz Chicken Broth

1 8oz pkg of Mexican mix shredded cheese

1 can White Corn- drained

1- 16 oz jar of CHUNKY salsa

2 tsp ground cumin


Directions:

Place all ingredients in crock pot or slow cooker and let cook for about an hour or until beans are tender. 


Notes: This is the recipe that I used and how I cooked it. This can also be done with chicken breast or chicken that you cook yourself. I just chose to use a cooked rotisserie chicken because it was quicker. Next time I may make a few changes myself, if so I will update but for now this is what I did and it was amazing, there was not one bite left.

EASY Chicken and Dumplings!!

That's what was for dinner tonight! And I have to tell you it was SO good. I was sitting here wondering just what I ws going to make for dinner and I am sick of the same old things week after week. So I got a bit creative tonight and this is what I did:

Chicken and Dumpling the EASY way. Wanna know how I did it? Ok Ok I will tell you. See below!




What You Need:

One Cooked Rotisserie Chicken

1 1/2 quarts of chicken broth

1 teaspoon poultry seasoning

1 can cream of chicken soup

4 full size carrots sliced up in 1/4 peices

You can also add early peas if you prefer- tonight I did not.

3 cans of 10 count small biscuits.

Yes! That is ALL!

What To Do:

Bring chicken broth, pulled up chicken, poultry seasoning, carrots and cream of chicken soup to a boil. While it is starting to boil roll out biscuits and cut into strips and drop into boiling water until you have added all 3 cans. It should be boiling pretty good about halfway through adding biscuits, so turn it down just a bit so it doesn't try to boil over. Once all strips are in turn it down to low and stir often. Took me about 30 minutes to cook tonight :) If you have any questions just leave a comment! Thanks!!
